A really healthy, fruity couscous with lots of fresh herbs and fruit and nuts ,

Just add boiling water to couscous (2:1). Leave for 15 minutes.
Chop up dried apricots and add.
2 tablespoons of virgin olive oil and 2 tablespoons of vinegar (apple or honey).
Then add chopped basil and parley, strawberries and either chopped almonds or pistachio,
Season and sprinkle with juice of half a lemon . Leave for an hour or more for the flavours to mingle.
